About

Heavy Cake is a dense, moist, rich concoction that has its feet in English and West African traditions and it’s heart in the Caribbean.  It is traditionally made with cassava, coconut milk, all sorts of warm spices, brown sugar and butter.   It is home.  My father makes a version using Cream of Wheat, instead of cassava, on Christmas morning.  My husband and I served it at our wedding.

This blog is about cooking and eating. It is about raising our daughter.  It is about home.

        Shauna, how do i make shredded chicken? I’m sure its the easiest thing in the world to do but I dont even know where to begin! I’m sure I use a thigh or leg (no breast, huh?)… I want to make chicken pot pie and chicken enchiladas but shredded chicken is a must for both recipes!! Help please! 🙂

        You need to cook the chicken first. You can roast it – season with salt and pepper and roast on a sheet pan or in a baking dish at 375 until it is golden brown and cooked through – about 40 minutes. Let it cool. Remove the skin and pull the meat off the bones in large shreds. Cook a bunch of it at once and shred it and you can make things all week with it – salads, sandwiches, enchiladas, pot pie, bbq chicken pizza.
        Alternatively, if you stew some chicken you can use those leftovers. I am planning on doing some form of stewed chicken in the next couple of weeks so I’ll link you when I do. Let me know how it goes!
