White Russian Truffles

Christmas Candy Making Installment No. 4:  The White Russian Truffle – AKA The Caucasian Truffle. These truffles are a gift for some of my closest friends, friends I don’t see often enough.  Friends with whom I have watched The Big Lebowski with 428 times or so.  There is a reason Caucasians are The Dude’s cocktail of choice, they are delicious.   I toyed with the idea of rolling them in powdered coffee creamer, if you are a fan of the movie, you know why, but I thought almonds a little more palatable, and prettier.

White Russian Truffles – Makes approximately 45 truffles

8 oz white chocolate

1/2 cup heavy cream

5 tablespoons unsalted butter

3 tablespoons Kahlua

1 tablespoon, coffee, cold

1 teaspoon vanilla extract

1/2 cup almonds, toasted and coarsely ground

Place the white chocolate in a heat proof bowl.  Combine the heavy cream and butter in a small saucepan.  Bring to a boil.  Remove from heat and pour over the white chocolate.  Let sit 2 minutes and whisk to combine.  Add the Kahlua, coffee and vanilla to the chocolate, whisk to combine.  Cover and refrigerate overnight.

This mixture is pretty soft. A piping bag (or a ziploc bag with the corner cut off) make quick work of  forming the truffles and is a cinch to clean up.   Refrigerate until firm.

Roll in the almonds or powdered sugar, coarsely chopped pistachios or cashews would be lovely as well.
