Dulce De Leche

I am making two things with dulce de leche this weekend.  A cake with dulce de leche buttercream and shortbread with layers of dulce de leche and chocolate ganache.   Both of those projects require time and attention. Making dulce de leche does not!

Put a can of sweetened condensed milk in a deep pot, cover with water and bring to a boil.  Reduce heat and let simmer about 3 hours, adding more water to keep the can covered.  Carefully remove from the heat, and open with care.  Voila! Dulce de Leche!  Mix it into ice cream, sandwich it between cookies, make a pudding with it.  Or you can do what I did for dessert last night.  Smear it on a piece of toasted baguette and sprinkle with coarse salt.  Enjoy!
